Maybe I'm overthinking this, but wouldn't the recoil from a cannon make the whole shebang fly off that slimy snail's back like butter off a hot skillet?
You are actually UNDERthinking it, tovarish. Dwarfs who are riding on giant snails tend to care a lot about realism and therfore steady their howdahs in an ancient, thoroughly field-tested way that makes the snail's characteristic jelly-like body mass completely absorb the cannon's recoil.
That's why they use snails in the first place! ...well, at least I am sure it's not for the speed..
